The Olive Harvest at Can Lluc: Creating Our Own Local Olive Oil in Ibiza

At Can Lluc, there are days that feel as if they were written by the land itself. Days that smell of autumn, countryside, helping hands, and a golden light that filters through the olive trees as if celebrating alongside us.
Just a few weeks ago, one of those days arrived: the annual harvest of our olives, one of the most special moments for those who love the authentic rural side of Ibiza.

It’s not just a harvest.
It’s a ritual.
A tradition passed down.
A quiet gesture of gratitude toward the land that has cared for us for more than three hundred years.

A Legacy That Lives On Among the Olive Trees of Our Ibiza Estate

Decades ago, when the estate was still our grandparents’ farmhouse, the olive harvest was a family event: everyone gathered to collect the olives that would later become the local oil that lit, nourished and accompanied daily life.

Today, even though the hotel has grown into Can Lluc Boutique Country Hotel & Villas, that tradition remains at the heart of who we are.

Our olive trees—young yet full of life—produce small arbequina olives, a quiet treasure of the Ibizan landscape. This season, the land gifted us around 173 litres of extra virgin olive oil, the result of patient work, careful hands, and a deep commitment to our environment.

Every drop tells a story.
A root.
A way of understanding life.

Harvest Day: When the Estate Breathes Differently

The air shifts.
The sound shifts.
Even footsteps on the earth feel slower, more respectful.

The arrival of the harvest transforms the estate. There’s a new stillness, a certain glow on the leaves, an expectant silence that fills every corner. We live these days with genuine excitement, following the process and celebrating what the land offers us year after year.

Because at Can Lluc, rural life is not a style—it’s our essence.

No rush.
No noise.
Just countryside, breath, and gratitude.

An Oil Born from the Land… and Served on Your Plate

Our local olive oil is not sold outside the hotel. It isn’t distributed. It isn’t commercialised.

It is a small and authentic treasure, created exclusively for our guests and for the kitchen of our restaurant, where every dish reflects the slow-food philosophy we proudly embrace.

We use it raw to finish fish and salads, and also in the preparation of traditional recipes. Its fresh, fruity, delicate flavour adds that touch that turns a good dish into an unforgettable one.

You can taste it in our gastronomic proposals:

Or enjoy it even more intimately in our 19th-century casa payesa, where many guests have told us they tasted “the best olive oil of their lives”:

Sustainability Is Not a Concept: It’s a Daily Practice

Producing our own olive oil is part of a much larger cycle:
how we work the land,
how we care for the water,
how we choose local products,
and how we understand hospitality from a place of responsibility.

It’s one of the pillars of our commitment as an Ecoresort in Ibiza, where every decision brings us closer to a more conscious and respectful way of living with our surroundings.

Producing this local oil means:

  • Reducing transport and emissions
  • Increasing real traceability
  • Supporting local production
  • Preserving a payesa tradition
  • Offering true authenticity to our guests

It’s our way of saying:
“Everything has meaning here.
And it all begins with the land.”

From the Estate to the Table: A Flavour That Exists Only at Can Lluc

Those who visit us year after year know that Can Lluc is not just a place to sleep:
it’s a place to feel.
To eat slowly.
To understand the island in a different way.

Our olive oil is part of that experience

It is the liquid essence of an agrotourism that stays alive, evolves, modernises—but never loses its roots.

Because as long as there are olive trees in this estate…
there will be stories to tell, hands to harvest with, and dishes to honour.

Perhaps the best way to understand the magic of this oil is simply to taste it.
To sit in our garden, at a quiet table, listening to the pines and feeling the warm evening breeze, letting the flavour of the Ibizan countryside speak to you.

We look forward to sharing it with you.
